Serves 4 as a side salad
- 2 ripe avocados, sliced
- 1/2 red onion, thinly sliced
- 1/3 cup toasted walnuts
- 2 large handfuls arugula (rocket) leaves
- 2 tablespoons olive oil
- 2 tablespoons organic apple cider vinegar
Whisk oil and vinegar together until well combined.
Combine all ingredients except oil and vinegar in a serving bowl and toss gently with dressing.
